Red Mullet Fillets

Red Mullet is a round fish and a highly seasonal species, often caught as by-catch in the Atlantic ocean. Red Mullet availability varies throughout the year depending on weather and tides. Red Mullet is caught by otter trawl or static nets. 
Cooking instructions: For beautifully cooked fillets, simply fry, skin-side down, in a hot pan with olive oil until the skin is crisp.
